A strong believer in recycling, optimal resource utilization, waste management, emission minimization, environmental sustainability and wealth sharing, Maan has been a cooking enthusiast who authored two manuscripts on both Middle Eastern and Fusion cuisines.

Sumac (also spelled sumach), is a flowering plant that grows in subtropical and temperate regions throughout the world. Sumac is tart, lemony, tangy, with just a tinge of a sour, vinegar-like flavor. Historically, it has been used for centuries as a spice, a dye, and even in medicine for its antimicrobial and antioxidant properties. It is a widely used and well-loved spice in Middle Eastern and Mediterranean cooking. In fact, one of our signature dishes is Musakhan, an authentic Palestinian dish where Sumac is a key ingredient.
